Lettuce, cucumber, celery, scallion, cilantro and avocado. It doesn't get much greener than this.

Ingredients:
3 cups romaine lettuce
2 stalks celery, sliced
1 small cucumber, peeled, cut in half length-wise and sliced
2-3 scallions, sliced
1 carrot, peeled and grated
1 apple, diced
1 avocado, pit and skin removed
1-2 ounces goat cheese
1/2 cup fresh cilantro
drizzle of honey
1 tablespoon olive oil
salt, to taste
Directions:
Combine lettuce, celery, cucumber, scallion, carrot and apple in a large bowl.
Prepare the dressing by combining avocado, goat cheese, cilantro, honey, olive oil, and salt in a small chopper/mini food processor. You can also finely chop the cilantro and mash the avocado, goat cheese, honey, olive oil and salt together.
