Sweet and Savory Red Cabbage
You'll crave cabbage once you try this!
Makes:
4-6 servings
Total time:
30-40 minutes
Ingredients:
1 red cabbage, outer layer peeled then chopped into small pieces (include the core)
2 tablespoons oil (we like olive, avocado, or sunflower oil)
1/2 cup raisins
1 1/2 cups juice/hard apple cider/sweet wine (use what you have!) or 3 tbsp brown sugar in 1 1/2 cups water
Juice of 1 lemon
1 onion, peeled and chopped
2 tablespoons siracha hot sauce or 1/2 teaspoon cayenne pepper
salt, to taste
Directions:
Lightly oil a large pot and add onion. Cook over medium heat until onions are translucent.
Add the cabbage, raisins, and half of the liquid (juice/hard apple cider/wine/water). Bring to a boil, stirring frequently.
Once to a boil, reduce heat to simmer cabbage. Add hot sauce/cayenne and salt. Add liquid as needed, while continuing to stir.
Once cabbage feels soft (~25 minutes), remove from heat and serve warm.
