A great way to each zucchini!
Makes: 8 servings Total time: 20-30 minutes (10-15 minutes preparation, 10-15 minutes cooking)

Combine grated zucchini, grated carrot, eggs and salt in a large bowl. Mix well, and allow to sit for 5-15 minutes (to remove excess moisture).
Add olive oil to a large skillet, so the bottom is well-coated.
Scoop up ~1/2 cup of the vegetable mixture, try to sqeeze out excess moisture, and form slighly flattened balls (these are easier to flip than if they are more flattened) . Fry for 7-8 minutes on each side. When you flip them, you may want to press down gently to flatten them out. Enjoy!
