Enjoy gluten free black bean burgers!

Servings: 8-10         Time: 1 hour, 15 minutes (15 minutes prep time, 60 minutes cooking time)

 

Black bean and sweet potato burgers

Ingredients:

  • 4 small sweet potatoes, peeled and cubed
  • 4-5 mushrooms 
  • 4 cloves garlic
  • 1/2 red onion
  • Jalapeño to taste, up to 1 whole jalapeño with seeds
  • 1/2 c. rolled oats
  • 1 can (15.5 oz) black beans, drained
  • 2 eggs
  • 1/2 tsp. salt
  • 1/2 tsp. chili powder
  • 1/2 tsp. paprika
  • 2-3 tbsp. olive oil

Directions:

  1. Place peeled and cubed sweet potatoes in a medium saucepan, add water until covered. Boil until tender (test by poking with a fork, should be soft). Transfer sweet potatoes to a new bowl, and allow to cool. 

  2. Meanwhile, put oats in blender, to make an oat flour.

  3. Finely chop mushrooms, garlic, onion and jalapeño. If you have a powerful blender or chopper, you can use that instead.

  4. Once sweet potatoes are cooled, mash slighly and add to other vegetables.

  5. Briefly blend or mash drained black beans and add to vegetable mixture.

  6. Add 2 eggs, salt, chili powder, paprika, and oat flour to the vegetables. Mix well.

  7. Pour 2-3 tablespoons olive oil into a large non-stick skillet and turn heat to medium. Form flat patties. Allow to cook 5-10 minutes on each side, until solid and browned. They may be soft when you flip them, but do your best, and with time it will get easier.
