If you aren't sure how to increase your radish consumption, here's one way to start

Servings: 4-6        Total time: 10-15 minutes 

 

Fresh radish and scallion salad

Ingredients:

  • 1 pound radishes, ends trimmed and finely sliced
  • 5-6 scallions, sliced
  • 2 tablespoons plain yogurt (or sour cream)
  • 1-2 tablespoons fresh dill, chopped
  • Salt, to taste (~1/4 teaspoon)
  • Pepper, to taste 
Variations:
  • Add 1/2 red onion in place of scallions
  • Add 1/2 cup shredded carrots
  • Use cilantro and/or parsley in place of dill    

Directions:

  1. Prepare radishes (sliced) and scallions (sliced). We recommend using a mandolin or food processor to slice radishes, if you have one.
  2. Combine radishes and scallions in a medium-sized bowl. Add yogurt or sour cream, dill, salt and pepper.
  3. Mix well, and enjoy this simple salad
