A great way to add daikon (or jicama or turnip) to your diet!

Servings: 4       Total time: 10-15 minutes 

 

Fresh daikon radish salad with honey-mustard

Ingredients:

  • 2-3 radishes, sliced
  • 3-4 scallions, sliced
  • 2 cups daikon, grated
  • 1/2 red bell pepper, diced
  • 1 tablespoon honey
  • 1 tablespoon mustard
  • 1 tablespoon olive oil
  • salt and pepper, to taste
Alternatives:
  • 2 cups grated turnip, instead of daikon
  • 1 cup grated jicama in addition to or instead of daikon or turnip
  • Add 1/2 cup grated carrots  
    

Directions:

  1. Prepare radishes (washed and sliced), scallions (sliced), daikon (grated) and red bell pepper (diced), combine in a medium-sized bowl.

  2. In a small bowl, combine honey, mustard, olive oil, salt and pepper. Mix well with a fork or whisk. Add salt and pepper to taste.
  3. Toss vegetables with honey mustard dressing.
