Chickpeas in Yogurt Sauce

Ingredients:

  • 1/4 cup fresh cilantro
  • 3 tablespoons whole-milk plain yogurt
  • juice of 1 lemon
  • 1 teaspoon olive oil
  • 1/4 teaspoon salt
  • 1/2 of a medium red onion, finely chopped
  • 1 medium tomato, diced
  • 1 can (15 ounces) chickpeas, drained

Directions:

  1. We recommend using a chopper/mini food-processor to make the sauce, but can be prepared without one. If using a chopper, simply combine the cilantro, yogurt, lemon, and salt. Puree until well mixed. If you are not using a chopper/mini food-processor simply finely chop the cilantro, and mix the yogurt, lemon and salt well with a whisk or fork.

  2. Combine the sauce with chopped onion, tomato and the chickpeas in a bowl. Toss, and serve.
