Carrots with a kick!

Makes: 4 servings       Total time: 15 minutes

 

Sesame carrots

Ingredients:

  • 4 carrots, peeled and shredded
  • 1 inch piece of fresh ginger (approximately 1 tablespoon), finely chopped    
  • 1 tablespoon sesame oil
  • juice of 1/2 lemon
  • 1 tablespoon honey
  • 1/4 teaspoon cayenne pepper (or to taste)
  • salt, to taste
  • 1 teaspoon sesame seeds

Optional additions:

  • Fresh cilantro, to taste  
  • 2-3 scallions, sliced   

Directions:

  1. Prepare sesame ginger sauce. Combine ginger, sesame oil, lemon and honey together in a bowl. Add cayenne pepper and salt, to taste. 
  2. Add prepared carrots (peeled and shredded) to the sesame ginger sauce. Mix well. Add cilantro and scallions if desired. 
  3. Garnish with sesame seeds.
