Lettuce introduce you to our turkey!

Makes: 4 servings Total time: 30-45 minutes

 

Ground turkey lettuce wraps

Ingredients:

  • 1 pound lean ground turkey   
  • 1 large carrot, peeled and shredded
  • 1 small red onion, finely chopped
  • 1 jalapeño, finely chopped
  • 4 cloves garlic, finely chopped
  • 1 inch piece of fresh ginger (approximately 1 tablespoon), finely chopped or shredded
  • 1/4 cup fresh cilantro, finely chopped
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 head of lettuce (iceburg, butter or boston) 

For the optional mustard-plum sauce:

  • 1 plum, pitted and coarsely chopped
  • 2 teaspoons sesame oil
  • 1 tablespoon honey (adjust depending on plum sweetness)
  • 1 tablespoon mustard (any variety)
  • sprinkle with sesame seeds, if desired

Directions:

  1. Combine shredded carrot along with chopped onion, jalapeño, garlic, ginger, and cilantro in a large bowl. Add turkey, brown sugar, and soy sauce. Mix well.

  2. Add olive oil to a large skillet, and cook the turkey mixture on medium-high heat until turkey is no longer pink (around 15 minutes). While the turkey is cooking, use your spatula to keep chopping it up.

  3. Meanwhile, prepare sauce. Place plum and sesame oil in a small sauce pan. Cook on medium heat until the plum is softened. Once the plums are softened, remove from heat and use a masher or immersion blender to create a sauce. Add mustard and honey. Mix well, and allow to cool before serving.

  4. Prepare lettuce leaves by washing whole leaves, patting them dry with paper towels.

  5. Combine sauce into meat, or serve separately. To assemble lettuce wraps, simply place a desired amount of turkey on the middle of a lettuce leaf, add sauce, and wrap ends up to have something to hold onto. This is not fork friendly!
