Spinach, Apple and Radish salad
Ingredients:
  • 10 ounces fresh spinach leaves
  • 6-8 radishes, ends trimmed and cut into wedges    
  • 1 apple, peeled and coarsely chopped
  • 2-3 scallions, sliced
  • juice of 1 lemon
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • salt and red pepper, to taste
  • 1/4 cup sunflower seeeds 
        

Directions:

  1. Combine prepared radishes, apple, and scallions with spinach leaves in a large bowl.

  2. In a small bowl, combine lemon, olive oil, honey, salt, and pepper. Mix well, and then add to the bowl filled with spinach.

  3. Add sunflower seeds and toss well.
