Lettuce, cucumber, celery, scallion, cilantro and avocado. It doesn't get much greener than this.

Lettuce salad with avocado, goat cheese, cilantro, honey and olive oil

Ingredients:

  • 3 cups romaine lettuce
  • 2 stalks celery, sliced
  • 1 small cucumber, peeled, cut in half length-wise and sliced
  • 2-3 scallions, sliced
  • 1 carrot, peeled and grated
  • 1 apple, diced
  • 1 avocado, pit and skin removed
  • 1-2 ounces goat cheese
  • 1/2 cup fresh cilantro
  • drizzle of honey
  • 1 tablespoon olive oil
  • salt, to taste
    

Directions:

  1. Combine lettuce, celery, cucumber, scallion, carrot and apple in a large bowl.
  2. Prepare the dressing by combining avocado, goat cheese, cilantro, honey, olive oil, and salt in a small chopper/mini food processor. You can also finely chop the cilantro and mash the avocado, goat cheese, honey, olive oil and salt together. 
  3. Add cilantro dressing to the salad and toss well.
