Celery root has never tasted so good!

Makes: 4-6 servings Total time: 10-20 minutes

 

Fresh grated celery root with apple, scallion, tomato, radish, raisins and a honey-balsamic dressing
Ingredients:
  • 1 celery root, peeled and shredded
  • 1 apple, peeled and cut into small pieces
  • 4 scallions, sliced coarsley
  • 10-15 cherry tomatoes, cut in half
  • 3-4 radishes, chopped
  • 1 handful of raisins
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons honey
  • salt and pepper, to taste

Directions:

  1. Combine celery root, apple, scallions, cherry tomatoes, radishes, and raisins in a large bowl.

  2. Add dressing ingredients (olive oil, lemon, balsamic vinegar, honey, salt & pepper) on top of the vegetables.

  3. Toss well, and serve cold.
