Simple salad with turnip, carrot, apple and a fresh honey-lemon dressing

Ingredients:

  • 2 carrots, shredded (peeled if not organic)
  • 1 apple, peeled and cubed
  • 1 medium turnip, peeled and shredded
  • 3 scallions, coarsley sliced
  • Juice of 1/2 lemon
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • salt and pepper, to taste

Directions:

  1. Combine carrots, apple, turnip, and scallions in a medium-sized bowl. 
  2. Add lemon, olive oil, honey, salt, and pepper on top of the vegetables.
  3. Toss well, and serve cold.
